Meatloaf Cupcakes with Bacon Sprinkles Recipe!

With a picky eater at home I like to get creative to get my kiddo to eat a wide variety of foods. Making them also appealing to the eye seems to get children more interested and focused on eating what fun creation is in front of them. So I thought I know my daughter loves cupcakes so lets try meatloaf cupcakes. While this avenue did not work to get her to eat I stumbled upon the most delicious meatloaf creation my mouth has ever had the pleasure of eating. Step by step I will show you how to make this yummy creation to both entice your picky eater and indulge yourself with a scrumptious meal.



INGREDIENTS:
MEATLOAF::
1lb Ground Beef
1/2 cup of Tomato Paste (small can)
1/4 tsp freshly ground pepper
1/4 tsp salt
1/2 cup of butter
2 Packages or 1 Cup of Maple & Brown Sugar Oatmeal
1 Egg
1 tsp of Onion Powder
PAM

MASHED POTATOES::
4 Large Potatoes
1/4 tsp of salt
1/4 tsp of black pepper
1/4 cup of butter

BACON BITS::
12 strips of bacon

SUPPLIES:
Mixing Bowl
Metal Muffin Pan
Rimmed Baking Pan with Rack (so grease drops off in pan tray)
Boiling Pot
Sandwich Bag

PREP TIME: 20 MINUTES
COOK TIME: 45 - 50 MINUTES
SERVINGS: 3-6 PEOPLE

DIRECTIONS:
STEP 1 - Preheat oven to 350 degrees Fahrenheit

STEP 2 - Combine 1lb Ground Beef, 1/2 cup of Tomato Paste (small can), 1/4 tsp freshly ground pepper, 1/4 tsp salt, 1/2 cup of butter, 2 Packages or 1 Cup of Maple & Brown Sugar Oatmeal, 1 Egg and 1 tsp of Onion Powder all in a large bowl and mix together.

STEP 3 - Once meatloaf is mixed, spray muffin pan with PAM and load each spot almost full leaving about 1/4" from the top. (shown above) Set aside.

STEP 4 - Using your Rimmed Baking Pan with rack, take your 12 pieces of bacon and place them side by side on the rack. (line pan with foil so once grease dries later you can just toss it)

STEP 5 - Once oven is heated to 350 put the meatloaf on the middles oven rack and the bacon on the bottom lower rack. Set your timer for 35 minutes and be ready to check every 5 minutes after for browning.

STEP 6 - While both are baking in the oven let get those mashed potatoes ready. Remove the skin off your potatoes and cut them in half. Put in your boiling pan and run water over them until potatoes are covered. Boil for 15 minutes.

STEP 7 - Now that the potatoes are done boiling (breaking apart extremely easy with fork), mash them up and add the butter, salt and pepper.

STEP 8 - Let mashed potatoes cool for about 10 minutes and place a large amount inside the sandwich bag. (shown above) Cut the corner off to the size you would like the "icing" to be.

STEP 9 - Remove meatloaf and bacon when fully brown. (meatloaf finished shown above)

STEP 10 - Once bacon cools, cut into pieces and set aside. (shown above)

STEP 11 - Time to build, place your meatloaf on bottom, squeeze your mashed potato icing on top and add your bacon sprinkles on top. (shown above)

STEP 12 - Enjoy!!



*Serve with rolls, vegetables or salad.
